Grilled Avocado with Summer Corn Salad
INGREDIENTS
2 Ripe Haas Avocados halved with seed removed
3 ears of corn cleaned and shucked
Pat of butter
Olive oil
Grated Parmesan cheese
Cilantro
Lime
Salt and Pepper
DIRECTIONS
Boil corn in a large pot of water. Salt water when it comes to boil as you would pasta, and reduce heat. Cook corn until al dente about 10-15 minutes.
Remove corn and place in a bowl to cool with pat of butter.
Get your grill hot (this can be indoors on the cast iron grill pan or outdoors on your grill of choice). Drizzle avocado halves with olive oil or spray with your favorite cooking spray. Place flesh side down on grill and let cook until grill marks form (about 7minutes).
Meanwhile, slice corn from the cob. Stir in about half a cup of Parmesan and same amount of coarsely chopped cilantro. Drizzle with olive oil, add juice of one lime, salt and pepper to taste.
Spoon corn mixture into avocado halves. Sprinkle with more cheese and enjoy!
